Beau's Bistro. A place where friends gather to share
stories, ideas, and above all else, an appreciation of good food. Just
as my poetry and stories are born from my life's journey, these meals, recipes,
and ideas have traveled that same road. After all, we travelers must eat. And
sometimes we must be sustained by more than love, longing, laughter, and joy.
Every recipe here carries a memory. A place. A friend. A lesson.
Sometimes all three. I have learned there is little that can take the place of a
good friend, a simple broth, and a warm loaf of fresh, crusty bread. No matter
the country, city, or restaurant, bistro or home.
So I invite you in.
Pull up a chair. Have a glass of wine... or a beer. Sparkling water is always
here for the asking. As is a rich espresso or a lovely cup of tea.
Take your time.

someone I love. ...and she smiled.

I've never found a
country that didn't know how to welcome someone with a cup of something warm.
Coffee just happens to be my favorite language. If you know me at all, even just
through this site you know I am collector of moments.
Of ideas. Some people collect paintings. I collect conversations that often begin
with a good cup of coffee.
I love espresso, coffee, coffee drinks, chocolate-covered espresso beans,
tiramisu, and affogato. I collect presses, vintage percolators, Italian moka
pots, French presses, pour-over brewers, drip makers, and campfire percolators.
I love American coffee, Italian espresso, Turkish, Persian, Arabic (Khaleeji),
Vietnamese phin coffee, and many others. If you haven't experienced some of
these, I hope you will.The world is full of wonderful cultures, and
many have found their own beautiful way to honor this precious little bean. Like
whiskies, there is always another one to discover, another to savor, another to
appreciate.
So come on. Pull up a
chair. Try something unfamiliar. Somewhere in the world, someone has been
waiting centuries to share their favorite cup with you.
The Truth About these Pictures
Every photograph in this collection tells the truth. This is not a professional
food site or a cookbook. It's simply a collection of meals shared with love and
photographed with whatever camera or phone happened to be nearby. The food isn't
styled or plated for effect. What you see is exactly what left my kitchen and
found its way to the table. Usually that table was set for two people who love
good food, a glass of wine, shared stories, laughter, and the simple pleasure of
breaking bread together. For me, the kitchen is simply another studio. The
ingredients are the palette, the utensils are the brushes, and every meal begins
with a picture in my mind of the moment I hope we'll share. So don't judge the
photography too harshly. These aren't food photographs. They're photographs of
memories.
A Journey Through Laughter, Stories, Time & Love

Irish inspired - so a full Irish? Yes, I know the Guinness is
missing.
A little char, a little pink - a perfect caveman steak. I
admit that I did had a little taste before carving up the rest.

All that counts is what hits the table, not how it got there.

Now that my friends is an Easter basket for grown ups! This on
is all Ammie. She had to chase me away - I was to busy sampling and was in
the way.
Archimedes of Syracuse ordered a pizza pi. Ever see our
license plate? LOL....

Avocado black bean salad as the appetizer for a nice La Paz
inspired meal.
BBQ buffalo chicken strips with sweet potato fries and dipping sauces.
Blackened ahi on sprouts and arugula with brown rice, corn, hemp seeds, and savories with namu shoyu dressing.
Breakfast of eggs shambled with cream cheese and shredded Mexican blend, turkey sausage, cilantro and salsa in taco shells.
Caritas stuffed grilled avocados. Trust me they are under
there. Somewhere...
I cam in for lunch a sweaty mess working on the pool. Chicken egg salad
- perfect on a hot day .
Chicken masala, broccoli with a yogurt goat cheese sauce and basmati long grain rice.
Chilled summer salad, all fresh ingredients - blueberries, strawberries. pineapple. coconut, walnuts, yogurt, local homey and a dash of fresh vanilla.
Chinese chicken tahini salad. Light, fresh and delicious.
Coconut prawns on skewers with grilled baby tomatoes, wild brown rice, oranges, dates, Tahitian, zucchini,
banana and onion mash with arugula salad with a mango balsamic dressing.
Coconut red curry and glass noodles with broccoli and shrimp.
Cottage cheese & mozzarella waffle - a carnivore breakfast.
Cottage cheese strawberry protein shake - yum. You would
be so surprised.
Crab spring rolls.
Cream cheese covered with cranberries, jalapenos and pecans.
Served with crispy toasted sourdough roundels.
Dark chocolate mini cakes with raspberry filling and chocolate glaze,
home made vanilla ice cream and fresh raspberries on top.
Grill to create a crispy bottom inside edge od a glazed donut,
add smoked maple Canadian style bacon and egg for the perfect
northern Sammy - Canada's Mountain Bakery inspired breakfast treat.
An espresso with a lovely natural crème - success!
Fat pasta with mizithra cheese, Diablo shrimp, Kalamata olives and sun dried tomato checa.
Fathers day and bacon, more bacon, moose maple sausage, and some side stuff with, well, BACON!!
Fish tacos and fried potatoes.
Four egg omelet, filled with cream cheese, orange marmalade, orange zest and covered in green onion tips (chives) with fresh cracked pepper - your welcome.

Fried chicken patty pizzas and a side salad.
A surprisingly great gluten free fried chicken Caesar
style salad.

Home made bread, makes French toast stuffed with cream cheese and blue berries
and maple syrup.
Hora de comer en casa de Beau's bistro. (anchorites

Huevos Bomancheros.
Huevos ranchero wraps. Kind of a fun twist on a great
meal.
No, I'm not sharing.
Individual Peach raspberry vanilla ice-cream pies. I
ended up with a few little unbaked pie shells from an event so used them
for a nice little treat.
Italian meatball production line - 64 in the end. Frozen
in separate bag groupings for multiple meals. We like to do this
because they are clean - no additives.
A lovely way to make ordinary brownies (is there such a
thing?) special.
I lovely vintage gear. These restored beautifully.
Post thanksgiving lunch was a Guinness with a side sandwich.
I made organic hormone free turkey meatballs with wing sauce
(Franks & Butter) topped with a natural raw cheese. I made a side of blue cheese dressing
from Greek yogurt on butter lettuce (in place of pasta).
Maple and pecan bacon - happy birthday America - now pass the ammo.
No matter where you are, a good cup of coffee just starts the day off right
NRA magazine with a harbor freight advertisement - sorry the food out of the frame.
Oreo cookie base, vanilla bean organic ice cream, cane glazed bananas, almonds, home made caramel drizzle with a sprinkling of more Oreo - every Oreo needs a top!
If you are so inclined this is a great dish to flambé!
Pasta light olive oil and fresh tomato Diablo gravy topped
with fresh pecorino, finely ground Italian herbs and white pepper with a
garden fresh salad topped with basil, oregano, soft goat cheese, balsamic
and VOO dressing.
Smoked shredded pork shoulder, hatch roasted green chili stew and
grilled fresh corn tortillas from our favorite local market.
All pumpkin pie's should be made with love.
These did not photograph well, but they were delicious. All
scratch made pumpkin & pecan pies with cherry turnovers.
Home made ramain soup. Lots of bright fresh flavors here. you
can make this stove top as if it were shabu-shabu for a fast, great
result.
This is a winter winner -roasted red pepper soup with sautéed zucchini and fresh basil served with blackened corn and cheddar corn bread.
Or - its amazing chilled with fresh bread - torn not sliced. It matters.
Rose water sorbet with a dark cherry and pomegranate reduction -
Inspired from my time in Iran.
Rosemary fingerling potatoes, jalapeno cheese, corn, butter
grilled Tilapia, asparagus with a cranberry salsa.
S'mores at home are still great. They make a surprising
desert for guest and are supper easy on a baking tray. Bake until
golden brown, then top with a second cracker and put back in for a couple
of minutes only. I promise you, smiles all around.
Salmon with rosemary and a VOO basil drizzle.
Sauerkraut salad with roasted fingerlings, grilled onions, corn, pine nuts, great northern beans,
and shredded romaine topped with a simple ground mustard dressing and grated parmesan.
Ceviche Sunburst.
Savory Casa de la Paz pancakes - three cheese blended with onions
in the pancakes, topped with two eggs and salsa.
A fun scratch made chicken pot pie. Not sure why my
chicken looks so sad though... oh right.
Scratch made county buttermilk biscuits- served with a nice
bacon gravy. perfect with any meal - or just a little something in the
afternoon.
Seared and flame grilled lemon salmon, sautéed asparagus with curried spicy orientals (type of sweet potato) all served over arugula with feta.
Sesame seed encrusted wild salmon with a dark molasses soy demi-glaze, Persian long grain princess rice and fresh organic green beans.

Shrimp coconut Pad Tia with spiced mango salad.
Skinny bagel bacon stacks!
Spam and eggs on rice. A pearl harbor memory.
Spam tacos with cheddar cheese and sriracha BBQ sauce.
Spanish baked potato, Verde sun dried tomatoes, onions, fresh tomatoes, vegan bacon bits, parma on arugula.
Square cut tortilla fried - topped with brown sugar and butter
glazed bananas, and a cinnamon dusting.
Strawberry and heavy cream on a crumbled Oreo cookie crust.
Sushi rolls and a mixed tempura salad thing.
Sweet & Sour Chicken, Broccoli & Beef, Kimchee with Shrimp.
Taste of the Forest of Arden.
"Tell me about Irish pub food" you say. "Umm, can't
remember. But the company and the Guinness was grand!" I reply.
Tempos crab cream cheese avocado and spicy tuna topped with a crispy lotus root. Not worth the trouble.

chimichanga poblano peppers stuffed with shredded beef and
Queso Oaxaca cheese, with sides.
The home made biscuits are the entire point of this breakfast.

First day of Fall, Beau making breakfast on the ranch. Our
turn of the century stove.
Fish tacos and fried potatoes. This is a fun twist on fish
sticks. An easy quick way to do something different for the kids.
Forks over knives - with panache.
I found the old tray - cleaned it up and couldn't resist a bit of fun
making lunch for my Bella. - Ammie laughed.
French loaf stuffed with ground sausage, mushrooms, onions, marinara, and lots of provolone and mozzarella.

Great idea-marinara with Italian herbs, garlic and shredded mozzarella on an uncooked flour tortilla at 450 for six minutes. Crispy goodness.
